1. Wash pig's trotters and cut them into pieces, then put them into cold water in the pot, add a few slices of ginger and blanch them with 2 spoonfuls of cooking wine.
2. Then remove the trotters and clean them for later use.
3. Put cooking oil in the pot, add rock sugar, stir-fry over low heat until the rock sugar melts into caramel color.
