Today's fish soup is special. I didn't use the traditional method, but used a high-speed blender to make crucian carp soup. Ingredients: 300g wild crucian carp, 30g tofu, proper amount of hot water, 5g ginger slices, 4g salt, a little white pepper, a spoonful of lard and 5g coriander.
Production process:
1 Get all the ingredients ready first. The wild crucian carp I bought is very small and still alive. Very fresh!
2 Remove the scales, gills and viscera of crucian carp. I'm used to removing fins. It looks neat. If you don't care, don't look for fins. If there is a black film in the fish's stomach, it must be rinsed clean and drained with kitchen paper.
3 put a spoonful of lard in the pot to melt, and use vegetable oil if you care about lard!
Put the dried crucian carp in and fry both sides, because it absorbs water and will not fry oil.
5 add a few slices of ginger and fry together.
6. Put the fried crucian carp and ginger slices into a high-speed blender cup.
7 Add 30 grams of tofu, the old tofu I soaked in salt water.
8 Add 10g cooking wine to remove fishy smell.
9 put boiling water, remember to check not to exceed the highest water level line.
10 cover the high-speed mixer and the small cover on it. This small cover is breathable and spill-proof, and can also be used for feeding in the middle.

13 Take off the cup and open the lid. Be careful not to burn your hands by steam. Add 4 grams of salt and stir. ?

Tip: Tofu must be put less, otherwise it will not taste good if it is too thick. Finally, add salt and fry the fish to make the fish soup not fishy.
