I. Practice 1
Ingredients: 500g of cucumber, 250g of salt, 50g of brown sugar, 50g of liquor, 0/0g of pepper/kloc (dried red tip), 0g of star anise10g of pepper, 5g of ginger15g.
Steps:
1. Wash and cut cucumber, and marinate with a little salt for about 30 minutes.
2. Pickle juice: In a covered container, add 50g of white wine, 50g of sugar, a little salt, shredded ginger 15g, red pepper 10g, star anise 10g, and 5g of pepper, and stir evenly.
3. Marinate the pickled cucumber strips in the mixed juice for about 3 hours. Take it out and put it on a plate. It's best to put it in the refrigerator.

Ingredients: cucumber 1600g, 2 tbsps of salt, crystal sugar 160g, ginger 1g, 2 heads of garlic, 240ml of soy sauce, 5 peppers, 5 pickled peppers and 240ml of white vinegar.
Steps:
1. Wash cucumber, dry the surface moisture, and cut into strips the thickness of your little finger.
2. Sprinkle 2 tablespoons of salt on the cut cucumber, stir well and marinate for 5-6 hours to kill the water in the cucumber itself.
3. Peel and slice garlic, wash and dry ginger, slice the surface moisture, and prepare appropriate amount of pepper and pickled pepper.

4. Put the soy sauce, white vinegar and rock sugar into a corrosion-resistant container, add garlic slices, ginger slices, peppers and pickled peppers and marinate until the rock sugar melts.
5. Control the moisture of the pickled cucumber, and then marinate it in the juice prepared in the previous step for about 5 hours. Stir occasionally on the way to pickling, so that the cucumber and sauce can be evenly contacted.
6. Filter the pickled cucumber and seasoning to control the sauce.
7. Put the filtered sauce into the pot and boil it. Turn the heat down and cook for about 5 minutes.
8. After the sauce cools, add cucumber strips again and continue to marinate for about 5 hours.
9. Repeat steps 6 to 8 two or three times. Finally, put the cucumber and sauce together in a glass crisper, put it in the refrigerator and carry it with you.

Ingredients: 2 cucumbers, soy sauce 1 bottle, garlic 1 petal, salt, dried pepper, green pepper, ginger, garlic and soy sauce 500g.
Steps:
1. Cucumber is washed and diced to remove pulp, which is the key. If you don't take it out, it will become soft and brittle, then cut it into small strips, marinate it overnight (or several hours) with less salt, and drain it for later use.
2. Put about 2 taels of oil in the wok, stir-fry the dried peppers while they are hot, then pour 500 grams of soy sauce into the whole bottle, turn off the fire after boiling the soy sauce water, and then add a proper amount of monosodium glutamate to cool.
3. In the fresh-keeping box, put pickled cucumber strips, green pepper strips and ginger strips, then add garlic slices, and pour the cooled soy sauce water into the refrigerator for storage and carry it with you.
