In China's long feudal society of more than 2,000 years, from 22 1 BC, Qin King Ying Zheng proclaimed himself emperor, to 19 12, when Qing Emperor Xuan Tong abdicated, there were 494 emperors. Many are short-lived and few are long-lived. Emperor Qianlong of the Qing Dynasty reigned for 60 years and lived 89 years. He was the oldest of the emperors and enjoyed the family happiness of seven generations under one roof. Emperor Qianlong, who is nearly ninety years old, is in good health, still awake and moving freely. Sometimes he asks questions about state affairs as the emperor's father, calling himself a "perfect old man", which is entirely because of his good health and long life. When Qianlong was in power, the people were safe. He cruised many times, walked too much and had to eat. "Six stops on the southern tour, he sleepwalked." This is a poem written by Qianlong during his sixth southern tour. The food in the south of the Yangtze River haunted him as much as the beautiful scenery, leaving many food legends for future generations.

1. Dragon Carassius auratus soup "Carassius auratus soup" is one of the favorite dishes in people's daily life. Because of its fresh and pure taste and palatable fragrance, it is deeply loved by foodies. Speaking of the source of crucian carp soup, there is a wonderful legend!

Legend has it that Emperor Qianlong went down to the south of the Yangtze River, and one day he got separated from his entourage and lost his way. Coupled with the hot weather, hunger and thirst, he went straight to a river with no way out. When I was anxious, I saw a fishing boat parked not far away, and Ganlong walked past. Several fishermen on board suddenly saw a passer-by asking for a rest and invited the guests aboard. It's time for lunch now. The fisherman caught a fresh crucian carp from the bow. There was no oil, ginger, onion and other condiments on board, only some salt flowers were put in, and a bowl of milky white fish soup was cooked for Ganlong in a short time: "The fisherman is not delicious when he treats his guests, so please drink some fish soup to relieve fatigue." Gan Long smelled a fishy smell and tried to refuse, but his stomach failed. He was so hungry that his eyes blurred. He picked up the bowl and covered his nose with his other hand. After drinking it, he thought it tasted better than the delicious food in the palace. Gan Long repeatedly praised: "Yes, yes, it's delicious." And asked what fish soup it was. The old fisherman replied, "This is the soup cooked by crucian carp." After drinking enough fish soup, Gan Long felt tired and refreshed, so he asked the direction of his return trip and left.

After returning to the palace, I was tired of eating delicacies every day. He always feels boring and depressed. On this day, he suddenly remembered the crucian carp soup cooked by the old fisherman and ordered the chef to cook the crucian carp soup. The chef has never heard of crucian carp soup, so he bought some ten tail crucian carp to wash. After cooking the soup, he filled a bowl full. Ganlong took a drag and the smell went straight to the brain. He almost didn't throw up and cursed the chef. The cook was scared to death, but by experience, he immediately put a little more sesame oil into the pot, fried the crucian carp in hot oil for a while, boiled a bowl of fishy fish soup and sent it. I tasted it, and thought that although it was not as delicious as the fish soup made by the old fisherman, it was still very fragrant and really refreshing.

Later, crucian carp soup spread among fishermen, or in order to relieve fatigue or entertain guests, people always like to cook a bowl of crucian carp soup to taste. Not only can you match your diet reasonably, you have a good appetite and you can increase your health.

2. Qianlong and Dragon Boat Live Fish "Dragon Boat Live Fish" is a famous dish with court flavor in Beijing. Cut open a live fish, wash it, turn it over in the middle of the fish ridge to make it look like a log cabin, add egg white and yellow wine into the chicken paste, stir it evenly, put it in the log cabin, add a proper amount of fish soup, onion, salt and other seasonings, steam it until it tastes delicious, then pour the soup into the fish dish, push it into the boiled egg white bubble, and put the steamed "dragon boat fish" on it to become a colorful dish.

According to legend, Emperor Qianlong of Qing Dynasty made a private southern tour, accompanied by eunuchs, and came to the bank of Songjiang in Suzhou. He found a golden dragon boat parked, and he was about to embark. The boatman Shang Liang stopped him and said, "This boat is for the son of heaven, and Shu Ren is not happy."

In the joke, Qianlong inadvertently revealed his close-fitting Huanglong shirt. When Shang Liang saw it, he was frightened, knelt on the ground and shouted, "Please get on the boat and talk for a long time. The villain deserves to die!" Gan Long said, "I don't know if this is strange. What is the crime? " So he untied the rope and went boating on the river. It's past noon, and the hungry people have been ordered to eat. As luck would have it, the boatman served Liangshan cooking fish dishes. He fished up live fish from the river and made a "golden water crossing the boat". I saw a "dragon boat" made of fish floating in the golden soup in the fish dish of Nuoda University. After tasting it, Qianlong appreciated it very much, that is, he changed his name to "Dragon Boat Live Fish" and chose it to enter the palace. Since then, it has become a famous dish in the palace.

3. Gan Long and Squirrel Carp can cook quite a lot of dishes, and the one handed down from ancient times can be regarded as "sweet and sour mandarin fish". This dish is not only colorful and fragrant, but also delicious and tangible, and it is even more interesting to eat. When a fried mandarin fish (carp) like a "squirrel" is served on the table, it is immediately poured with steaming marinade, and this "squirrel" will make a squeaking sound. It was originally a masterpiece of Gusu cuisine and has a long-standing reputation at home and abroad.
