The spring for brewing Dukang wine is Jiuquan. The water in Jiuquan is clear, sweet and pure, and waxy sorghum is used as brewing raw material. Advanced technologies such as "sealing the cellar with fragrant mud, entering the pool at low temperature, fermenting for a long time, continuous cooking, sorting wine according to quantity and quality, grading storage, aging and esterification, and careful blending" are adopted.
Du Kang's wine poems
1. Tao Yuanming, a great poet in the Eastern Jin Dynasty, wrote a passage to himself on the topic of "Abstinence from Alcohol": "What Yidi did was polished by Du Kang".
2. In Zhao Zheng's Song of Wine Virtue in the pre-Qin period, it was said: Jiuquan in the earth, wine pool in the sky, Du Kang's wonderful knowledge, the prophet of righteous emperor.
3. Bai Juyi, a great poet in the Tang Dynasty, said in "It is better to watch day lilies than to enjoy dreams": "Du Kang relieves boredom, and day lilies relieve worries". 4. Su Shi, a writer in the Northern Song Dynasty, said in Drinking with Tao: "I will never worship Du Kang again".
