Raw material preparation: red bayberry 1000g, sake 1200ml, old rock sugar 450g, baking soda 2g, starch 10g, and appropriate amount of cold salad.
Preparation of waxberry fruit wine;
Step 1: First put bayberry into a bowl, then put all the starch, baking soda and cold boiled water into the bowl, then stir the water evenly, soak bayberry/kloc-0.5 minutes, and then rinse bayberry twice with cold boiled water for later use.
Step 2: Put the cleaned bayberry into a dustpan, and then put the dustpan in the sun to dry the bayberry for 2 hours.
Step 3: Prepare a dustpan jar, then put all bayberry and rock sugar into the jar, then put sake into the jar, and finally seal the jar and wait patiently for 15 days to drink.

1. When making red bayberry wine, red bayberry must be soaked in starch and baking soda for 15 minutes, because there are white worms in red bayberry. If these white worms are not removed, the taste of bayberry fruit wine will be affected.
After washing bayberry, be sure to expose it to the sun for 2 hours. If the hydrous red bayberry is soaked in sake, it will affect the taste of red bayberry wine.
3. Generally, bayberry fruit wine can be drunk after soaking for 15 days. It is not recommended to soak bayberry for a long time (no more than half a year), otherwise it will lead to the blackening of bayberry wine!
