Ingredients: washed mandarin fish and coriander to remove scales, yellow leaves and roots, peeled ginger and washed for later use.

Open the pomfret and wash the black inside with water.
Note: the black inside will affect the taste.

Make several cuts on the surface of mandarin fish and marinate with salt for half an hour.
