Ingredients: 90g shallot, 6 tablespoons soy sauce, 2 tablespoons soy sauce, sugar 10g, shrimp skin 13g, 50g vegetable oil, and a little cooked white sesame.
Fresh noodles: 400g medium gluten flour, egg 1 piece, clear water 105g, and 3g salt.
Production process:
Step 1: Make noodles first. I like to make my own noodles. I can also use the noodles I bought directly without additives. Put all the ingredients used to make noodles in a big bowl.
Step 2: Stir the ingredients evenly with chopsticks until they are flocculent as shown in the figure. Don't add too much water to the noodles. It's best to make the dough harder so that the extruded noodles won't stick together.
Step 3: Knead the flour dough into dough by hand. It doesn't matter if it looks loose. Knead it into a ball as much as possible and gently press it with a flour stick to make it smooth and convenient.
Step 4: Put the dough into a dough press, press it repeatedly for several times until the dough is smooth and uniform, and finally press it into a thin sheet with a thickness of about 1 mm for later use.

Step 7: Prepare scallion oil. As the required ingredients, scallion is the first choice, fried scallion tastes better, followed by fine scallion.
Step 8: Clean the shallots, dry the water, separate the shallots from the onion leaves, and use them. Cut the onion leaves into small pieces for later use.
Step 9: Take a small bowl, put the soy sauce, soy sauce and sugar together, and stir well until the sugar melts.
Step 10: Pour the vegetable oil into the pot and start heating on medium heat. When it is 50% hot, add onion leaves and fry slowly with low fire. I cooked a lot of scallion oil. Put the extra scallion oil in the refrigerator and cook the noodles directly. Just mix well next time. If you only eat once, reduce the amount.
Step 11: slowly fry onion leaves until brown, take them out with a colander and drain the oil for later use.
Step 12: Put the shrimp skin into a filter spoon, put it in hot oil, fry until golden brown, and take it out for later use. This extra fried shrimp skin is delicious. Don't miss it.
Step 13: pour that mix soy sauce and soy sauce into hot oil, stir quickly with a spoon to mix the vegetable oil and soy sauce, turn off the fire when the oil temperature boils, continue stir for 2-3 minutes, and wait for the oil temperature to cool down.
Step 14: add water to the pot to boil, and add noodles to cook.
