Materials:
4-5 medium-sized potatoes
1 small onion (optional)
1 egg
2-3 tablespoons flour
Salt and pepper (adjusted according to taste)
Vegetable oil (for frying)
Steps:
Prepare potatoes: Peel potatoes and cut them into small pieces. If you like the taste of onions, you can peel and chop them.
Boil potatoes: Boil potatoes in a pot of boiling water until they are soft (about 10- 15 minutes). When you easily pierce the potato with a fork, it means that the potato is ripe.
Mash potatoes: Drain the cooked potatoes and mash them with a potato masher or fork. If you use onions, mash them and mix them with potatoes.
Add seasoning: add eggs, flour, salt and pepper to the mashed potatoes and stir well until a uniform batter is formed.
Hot oil: put a proper amount of vegetable oil into the pot and heat it. When the oil is hot, smooth the oil in the pot.
Fried wipe: scoop a small piece of mashed potato batter with a spoon, put it in the pot and gently flatten it into a flat circle with a spoon. Depending on the size of the pot, you can fry several wet wipes at a time.
Fry until golden: fry until the bottom is golden and crisp, then turn over and wipe with a shovel, and continue frying the other side until both sides are golden.
Drain oil: wipe the fried oil clean and put it on the kitchen paper towel to absorb the excess oil.
Enjoy: Potato wipe can be eaten as a main course or as a side dish. Enjoy with yogurt, pickles or other dipping sauces.
This is a basic potato wiping method, and you can adjust and improve it according to your personal taste.
