Toraya coffee is mainly produced in the high mountains of central and southwest Sulawesi, and it is a rare variety in the world. It is not easy to grow and harvest Tolaja coffee, and the annual output is less than 1000 tons. Tolajia coffee has a slight fruity sweetness, and the entrance texture is thick, and then the bitterness disappears, leaving a sweet taste that lasts for a long time.

Luwak coffee is the most expensive coffee in the world. Mature coffee beans are eaten by civet cats, fermented and excreted by civet cats' digestive system, and then extracted and processed into hot kopi luwak (also called cat excrement coffee). Cat excrement coffee has unique fragrance, low acidity, relatively dull taste and little stimulation to the stomach and intestines.

Hidigalan is a mountainous area west of Lake Doba in North Sumatra Province, which produces very typical mandolin coffee. Degaland coffee is a kind of high-quality coffee with strong taste, low acidity and chocolate taste, and it is a kind of black coffee suitable for direct drinking.
4. Bali Jingdamani Coffee
Kodamani coffee grows in the cool mountain area of Kodamani, Bali, and is a kind of Arabica coffee. Because people in Bali planted Kodamani coffee with vegetables and fruits, the coffee beans produced have fruity taste, mild taste, moderate acidity and no sour or astringent taste.
5. Flores Bagawa Coffee
Flores Bagawa Coffee grows in Bagawa Highland on Flores Island in East Nusa Tenggara Province, Indonesia, and belongs to Arabica Coffee. Local people generally use the wet peeling method passed down from generation to generation to produce coffee with a strong consistency.
