Cut the meat into four pieces. I cut two pieces from the middle, and then cut them in half from top to bottom.

Just cut the onion and garlic casually, not too small.
Pour onion, garlic, coriander and cumin into a cooking machine to make sauce. I cut the coriander and put it in the first bowl. When the cooking machine moves, let it jump a few times, then pour 50g soybean oil and stir together.

Put two tablespoons of sauce in another bowl and squeeze in lemon juice to mix.
Spread the salt evenly, both sides.
Then spread the sauce left in the bowl evenly on the front and back of the meat.
Then cover the meat with plastic wrap and put it in the refrigerator for about one to two hours. I refrigerated it for about 1 hour for 40 minutes. The longer I marinate, the more delicious the meat is.
Take the meat out of the refrigerator and scrape the sauce off it.
Then put the meat on the chopping block and wipe off all the excess sauce by hand. It doesn't matter if it can't be wiped off. Cut a few more knives for each piece of meat. This is to prevent the meat from being fried more thoroughly.
Pour 10g oil into a pot and heat it on medium-high fire. Prepare tin foil and put the meat aside. Any plate without tin foil will do.
Boil the oil and add the meat.
Meat should be fried on all sides. When it's fragrant, I'll fry each side for a minute first, and then fry the noodles according to the situation. The gravy of the meat is also preserved, and there will be excess oil after the meat is fried. These oils will smell better when used for cooking.
