In foods containing moderate or large amounts of protein, there are more acid-producing elements than alkali-producing elements, but milk and some dairy products contain enough calcium to react with alkali. Although the content of protein in whole grains is not high, it is acidic because it contains excessive phosphorus in the form of phytic acid.
