The recommended way to eat bitter gourd is cool bitter gourd.
Practice: Wash bitter gourd, cut it in half, remove the capsule, and slice it with an oblique knife. Boil water in a pot, add a few drops of oil and a little salt, pour in bitter gourd, blanch for one minute, remove quickly, rinse with cold water, cool thoroughly, and control the moisture. Pour into the pot, add minced garlic, light soy sauce, balsamic vinegar, salt, sugar, sesame oil and a little cooked sesame seeds, mix well, cover with plastic wrap, and refrigerate for about ten minutes.
