Winter diet should follow the principle of "nourishing yin in autumn and winter", and it is advisable to eat a high-calorie diet, mainly to nourish yin and suppress yang.
First of all, beef soup
1. Soak beef in clear water for more than half an hour to soak the blood of beef. Put the soaked beef in a pot, add water, cooking wine and ginger slices and cook until blood bubbles. Then pour out the whole pot of water and wash the beef with warm water!
2. Start cooking beef soup, put enough water in the pot, and add fragrant leaves, star anise, onion ginger and tsaoko. 3. Boil it, then cover it and stew for 2 hours. 4. It is easy to insert beef with chopsticks, indicating that the beef is cooked and can be taken out by turning off the fire. 5. Cool the cooked beef and slice it for later use. 6. Put chopped parsley, shallots, pepper, salt and Chili oil into a bowl, rinse with beef soup, and then add chopped beef slices.
Second, pumpkin millet soybean milk
1. Wash pumpkin and cut into pieces. It will be sweeter if you use beibei pumpkin.
2. Prepare pumpkins, millet and soybeans according to your own preferences.
3. Put the soybeans, pumpkin pieces and millet into the soymilk machine and add a proper amount of water.
4. Cover the lid, select the soybean milk mode, the machine stops working, turn off the power, and pour the pumpkin soybean milk into the cup.
After soybean milk is ground, there will be a layer of floating foam on it, so it should be cleaned, otherwise it will affect the taste. The fragrant and delicious pumpkin soybean milk is ready, with delicate taste and high value.
Third, braised mutton.
1. Peel carrots and cut them into hob blocks.
2. Pour the oil into the pot and fry the yuba until it is crisp.
3. Soak in cold water immediately, pick it up and drain it.
4. Boil the mutton in boiling water, skim off the floating foam continuously during the cooking, and then pick up the mutton and drain it.
5. Mash a piece of fermented bean curd, add a spoonful of peanut butter and two spoonfuls of pillar sauce and mix well for later use.
6. Put 2 tablespoons of oil in the pan and saute ginger slices, scallions and garlic cloves.
7. Add mutton and fry until slightly brown. You can pour a little cooking wine along the side of the pot for the second time.
8. Add 2 tablespoons of light soy sauce, 15g of rock sugar, prepared sauce and 1 tbsp of oyster sauce and mix well. Add hot water, the amount of which is less than that of mutton, first boil it with high fire, then turn to medium fire, close the lid and stew for 40 minutes.
9. Open the lid, add carrots and yuba, and stew for 10 minutes.
10. Finally, the juice is collected by fire, and a handful of green garlic can be put in the pot.
