Stewed chicken with gastrodia elata and angelica sinensis
Exercise 1

Materials: hen 1000g, angelica 20g, gastrodia elata 15g, onion 5g, ginger 5g, salt 3g, cooking wine 5g, monosodium glutamate1g.

Steps:

1. After the chicken is slaughtered, unhairing, cleaning by laparotomy, chopping off paws, soaking in boiling water, cleaning with cold water, draining water, cleaning Angelica sinensis, cutting several times according to the block size, cleaning ginger and onion, mashing ginger, and cutting onion into sections for later use;

2. Put the angelica, gastrodia elata, ginger and onion into the chicken belly, put the chicken belly up into the casserole, inject a proper amount of water, add salt and cooking wine, boil it with high fire, and then stew it with slow fire until the chicken is crisp and rotten.

Note: When purchasing Angelica sinensis, we should distinguish between sweet Angelica sinensis and medicinal Angelica sinensis, which have different medicinal properties. It tastes different, too. It can be cooked with Radix Astragali or American ginseng.

Exercise 2

Ingredients: 500g hen, 6g angelica, 6g gastrodia elata, a piece of ginger, 8 red dates, 20 medlar, a handful of lily, a little salt and pepper.

Steps:

1. Roll the chicken into pieces. (If it's a whole chicken, I used half of it), weigh angelica, red dates, lilies and medlar, wash them, slice or break ginger, blanch the chicken in boiling water, and remove the blood.

2. Wash the chicken pieces and put them in the pot. Add water to avoid chickens (if you use a rice cooker, drink a bowl of soup and water), and pour in ingredients such as angelica, gastrodia elata, red dates and lilies. Simmer 1.5-2 hours after the fire is boiled, and add a little salt and pepper to improve the taste.
