Steps:
1. Wash the rice the night before and soak it in water. The water level is about one centimeter higher than the water level, so put it in the refrigerator.
2. Pour the soaked rice into the cooking machine, add half a glass of water and paste it into rice.
3. Add yeast and sugar and stir well. Add flour and mix well. Can be poured in three times, which is beneficial to full and uniform mixing.
4. The stirred rice paste looks like yogurt. Take out the prepared container, which can be a dessert container such as a small bowl of stew or a small cake mold for baking. You can brush a thin layer of oil and pour the rice paste until it is medium-cooked. 5. Put it in a steaming oven and ferment for one hour. If there is no steamer, you can seal the fermentation with plastic wrap.
6. If the oven is steaming, directly set the pastry mode for fermentation, and the time is100℃ for 20 minutes. If it's a steamer, uncover the plastic wrap and steam in the steamer for 20 minutes.
Tips:
200g of rice is about 280g after soaking, so the ratio of raw rice to cooked rice is 1: 4. If you need to cook more rice, you can do it according to this ratio. If the mash is not ready, friends can add 30 grams of cooked mash and 25 grams of water to stir.
