1. Wash and dry the ginger first (don't leave raw water, it will bloom).
2. Boil a large bowl of boiling water, let it cool, then pour it into a clean jar, put down star anise, pepper and salt, and stir well. If you eat spicy food, you can put some raw peppers in it.
3. Put the dried ginger down and cover the jar. Don't let it out. You can eat it in a few days and soak it next time. Tastes better.
