It is reported that some small supermarkets and shops have sold health wine beyond the shelf life, because shopkeepers have not paid attention to the shelf life. The supervision department of shopping malls reminds food operators and consumers not to equate health wine with white wine and foreign wine. Liquor and wine with high alcohol content can be preserved for a long time, but the shelf life of health wine is usually only 1~2 years in the old national standard. When choosing health wine, we should pay attention to the scale of people who are not suitable for drinking. Although health wine is good for health, not everyone is suitable for drinking health wine. Liquor has no shelf life, but during storage, alcohols in liquor will react with organic acids to produce a variety of esters, all of which have various special aromas. Because the esterification reaction in wine is suitable and slow, high-quality wine usually needs to be stored for three or four years or even longer. However, when the esterification reaction reaches a certain level, it will tend to be balanced and present a suspended state. If it is stored continuously, it will reduce the alcohol content and weaken the wine taste. Therefore, there is also a suitable time for liquor storage, not the older the better.
