The custom of eating jiaozi from winter solstice actually began in the late Eastern Han Dynasty.

At the end of Eastern Han Dynasty, there was a doctor named Zhang Zhongjing, who was very famous at that time. His medical skills are superb and he is called a medical sage. But at that time, there were wars everywhere and people's lives were very bad. Plague is everywhere, and people look down on this disease. In fact, Zhang Zhongjing was an official in Changsha at that time, but he couldn't bear to see such a scene, so he resigned and went back to his hometown to help the people in his hometown treat diseases.

It happened to be winter when Zhang Zhongjing returned to his hometown. On his way home, he saw many people by the river. Everyone is pale and emaciated with hunger, and many people's ears are frozen with cold. As soon as Zhang Zhongjing returned to China, many people came to seek medical treatment. Although many famous officials seek medical treatment, he still thinks about those whose ears are frozen.

So he let his land build a shed in a nearby vacant lot, and put a big pot on it, trying to prescribe medicine for these poor people to treat frostbite. It has been prepared for some time, and finally it can officially start on the day of the winter solstice. It gives these poor people medicine soup to treat frostbite.

The cooking method of medicinal soup is actually very simple. It's more like tonic than medicine. Firstly, mutton, pepper and some Chinese herbal medicines for removing cold are put into a pot and cooked. After the mutton is cooked, the herbs are taken out together with the mutton and cut into pieces. Then wrap the minced meat in dough, knead it into an ear, continue to cook it in a pot and give it to the poor.

These people will feel particularly warm after eating, their ears will get hot, and frostbite will gradually get better. This food was called jiaozi's ear at that time, but it gradually became jiaozi. Everyone remembers Zhang Zhongjing's kindness, but later Zhang Zhongjing died many years later.
