1, wax gourd method
Ingredients: white gourd 1000g, clear soup 500g, mushrooms 700g, winter bamboo shoots 700g, yam 100g, ginkgo 100g. Lotus seeds, coriander segments, monosodium glutamate and refined salt.
Exercise:
(1) After washing the small wax gourd, scrape off the thin outer skin. Cut off 1/3 at the top of the wax gourd to make a cover, then dig out the melon seeds, cook them in a boiling pot until they are half cooked, and then soak them in cold water until they are completely cool.
(2) Wash mushrooms, bamboo shoots and yam, cut them into squares of 65,438+0 cm square, add ginkgo and lotus seeds and add water, boil them with strong fire, simmer them for about 5 minutes, and pour them into a wax gourd bowl. Add clear soup, monosodium glutamate, refined salt 15g and a little cooked soybean oil, cover it, steam it in a drawer for 15min, take it out and put it in a big bowl, and sprinkle with coriander segments.
2. Salted three skins
Ingredients: 200g watermelon skin, 300g winter melon skin and 400g cucumber. Salt and monosodium glutamate are appropriate.
Exercise:
(1) Scrape the wax skin of watermelon, the fur of wax gourd and the pulp of cucumber, clean them, cut them into strips, soak them in boiling water, take them out and drain them.
② Put the above materials into a bowl, add salt and monosodium glutamate and marinate 1 ~ 2 hours.
3. Roasted mushrooms with wax gourd
Ingredients: 250g of wax gourd and 50g of water-soaked mushrooms. A small amount of salt and monosodium glutamate.
Exercise:
① Cut the wax gourd into small squares, soak the mushrooms and cut into pieces.
(2) Add oil to the pot, heat it, pour in wax gourd, shiitake mushrooms and soaked shiitake mushrooms, cook for a few minutes, and add seasonings such as salt and monosodium glutamate until cooked.
4. Fried carrots with wax gourd
Ingredients: 300g wax gourd, 75g carrot and 35g green pepper. Salt, monosodium glutamate, salad oil and starch.
Exercise:
① Shred wax gourd, carrot and green pepper, blanch with warm oil, and remove for later use.
(2) Blanch all vegetables with boiling water to get rid of greasy.
(3) Put a little oil in the pot, stir-fry all the raw materials, and thicken after seasoning.
5, melon ribs soup
Ingredients: ribs150g, wax gourd 200g. Ginger slices and salt.
Exercise:
① Wash the ribs, blanch them in boiling water, remove foam and wash them for later use; Peel and seed wax gourd, and cut into pieces; Slice ginger, or pat loose small pieces of ginger.
② Put the ribs and ginger into the pot at the same time and add water. Boil the ribs and ginger with high fire first, and then simmer with low fire for about 1 hour. Then add the wax gourd slices, continue to stew until the wax gourd slices become transparent, and then add salt to taste.
