Production technology and technical treatment of probiotics

1, production process

At present, the production technology of probiotics mainly includes solid surface fermentation and large tank liquid fermentation.

Solid surface fermentation method: the bacterial mud cultured on the solid surface is mixed with the carrier in proportion and dried. This method has the advantages of low yield, high labor intensity, easy pollution by miscellaneous bacteria, and is not suitable for industrial production, but the investment is small.

Large-tank liquid fermentation method: its technological process is as follows: strain inoculation culture → seed tank culture → production tank culture → discharging culture solution and adding appropriate carrier → drying → crushing → screening → quality inspection → probiotic products. This method is suitable for industrial production and convenient for aseptic operation, but the cost is high.

2. Processing technology

Different strains, such as Bacillus, lactic acid bacteria, yeast, etc., have different tolerance to environmental factors, but as active ingredients in probiotic products, their efficacy is different and it is difficult to choose. People have studied some protection methods, such as embedding and microencapsulation, and achieved satisfactory results. But the cost increases and the production process is complicated.

A study by the University of Nebraska shows that adding oil to the diet can protect yeast from granulation to some extent. With the development of genetic engineering, the problem that microorganisms are destroyed in the process of granulation can be fundamentally solved by transplanting spores from Bacillus into spore-free lactic acid bacteria to make them become high-temperature resistant strains, or considering combining and screening strains to replace lactic acid bacteria.

At present, compound probiotics mainly composed of Bacillus are widely used in the market, and the effect is good. Even though most living bacteria such as lactic acid bacteria and yeast are lost in the granulation process, lactic acid, B vitamins and high-quality protein in the culture can still play a good role with Bacillus. Therefore, screening strains with better tolerance and stronger function has always been an important topic in the technical field of probiotic use.
