Steamed bread in the refrigerator is very common in the north, but aflatoxin is controversial in recent years. Then the question is, will steamed bread breed toxins if it is kept in the refrigerator for more than three days?
At the end of the 20th century, aflatoxin was listed as a first-class carcinogen by WHO, and its toxicity was dozens of times that of arsenic, second only to botulinum toxin. However, its harm is that it can directly destroy the liver of any living body. Excessive intake can induce acute liver necrosis, acute hepatitis, hepatocyte degeneration and bile duct hyperplasia in a short time, form cirrhosis over time, and induce fibrosis due to liver cancer.
Aflatoxin B 1 is the most common food in life, but it has a high risk of toxicity and cancer, and often exists in nuts such as peanuts, corn and melon seeds. Aflatoxin can also be detected in fermented pickles and sauerkraut, especially in high temperature and humid areas, the detection rate of aflatoxin in vegetable oil is quite high.
Toxins enter the human body and metabolize the liver, so liver injury is the most harmful. At the same time, related toxin components can also be detected in kidney, pancreas, spleen and adrenal gland. If ingested discontinuously for a long time, it will generally not accumulate in the body, and will be excreted by respiration, cough, sneezing, spitting, feces, urine and other metabolism within 48 hours.
Aflatoxin has strong high temperature resistance and cannot be destroyed by ordinary heating temperature. It can withstand the high temperature of 280℃ and is insoluble in water and alcohol.
In this regard, experts have done an experiment to divide 100 steamed buns into 10 groups, the first group 10, the first group 1 0 in the refrigerator 1 day, the second group in the refrigerator for 2, 3, 4 and 5 days, and so on. 10 group of steamed bread found that steamed bread frozen in the refrigerator for more than three days did not breed aflatoxin.
In addition, it is shocking that the steamed bread frozen in the refrigerator for 5 days and 10 days did not produce any mold, but the taste changed and the water was lost. Even if heated, the taste is no longer soft and waxy.
Data show that steamed bread stored in the refrigerator for more than three days will not breed aflatoxin, because the temperature in the refrigerator is extremely low, the frozen layer is below 0, aflatoxin is suitable, and the ambient temperature is above 25 degrees. Therefore, it is the right choice to put it in the refrigerator.
Whether steamed bread can be stored in the refrigerator has a lot to do with its hygiene. If steamed bread is cooked in a clean container, then covered with plastic wrap and put in the refrigerator, even if it is stored for 1~2 months, the problem is not big, but the taste is completely different from before.
1, bitter nut
If you eat bitter gourd seeds, pistachios, macadamia nuts and other nuts, you must spit them out and brush your teeth and rinse your mouth. The bitter taste of nuts mainly comes from the parasitism of aflatoxin, which becomes bitter after mildew, and it is easy to suffer from liver cancer when ingested in large quantities.
2. Inferior sesame paste
Many unscrupulous merchants make profits by mixing moldy peanuts and sesame seeds with good peanuts and sesame seeds to make sesame paste and peanut butter, but these moldy foods contain aflatoxin, which is not easy to be identified during processing, so we still have to choose regular manufacturers.
3. Self-extracting oil
Oil crops such as peanuts, corn and sweet potatoes are prone to mildew during storage, and self-squeezed oil may also carry aflatoxin. However, the process of self-extracting oil in small private workshops is extremely simple, and it is impossible to refine raw materials accurately, which eventually leads to aflatoxin entering edible oil.
Step 4 soak the fungus for a long time
Auricularia auricula is rich in dietary fiber protein and other mineral components, which are easily oxidized with air when soaked in water for a long time, resulting in pathogenic bacteria similar to biotoxins.
As mentioned above, aflatoxin is very resistant to high temperature, and it is difficult to remove even if it is disinfected at high temperature. However, ultraviolet irradiation can play a certain role in the low concentration of aflatoxin, and the pasteurization heat of bread machine can be completely eliminated by more than 90%.
However, it is difficult to pasteurize in life. Therefore, when you encounter moldy food, don't think about carrying forward the fine tradition of thrift in China, but put an end to the entrance and throw it away in time to fundamentally solve the problem.
If you accidentally eat, it is recommended to drink plenty of water to improve metabolism, accelerate urine excretion and detoxification, and drink plenty of water for diuresis. Aflatoxin is difficult to stay in the body. Unfortunately, there is no effective method to detect the residual aflatoxin content in the body.
