Is honey soluble in water better than honey insoluble in water?
Viscous honey has high Baume and low water content, but now there are also concentrated honey, which is also very thick. Only the concentrated honey has been destroyed by high temperature, and the effect is not good. There are a lot of concentrated honey now, but few people know it. Let's popularize it here.

If you are physically weak and afraid of cold, it is recommended to eat jujube nectar, which is generally brown, not easy to crystallize and has a strong jujube flavor. Jujube honey has a good function of nourishing qi and blood, but it belongs to warm honey. Don't eat too fast, lest you get angry. Jujube nectar has no obvious effect on constipation.

If there is no physical weakness, you can drink some neutral and cool honey such as earth honey and wild bazi honey. The local honey has a long brewing time, good honey enzyme value and high price. Wild bazi honey is a unique honey variety in Yunnan, which has the function of clearing away heat and toxic materials and is also a good honey variety. Both kinds of honey crystallize easily.

There are a lot of fake honey and concentrated honey in the supermarket. The following is the identification method.

First, four ways to identify true and false honey: to identify true and false honey, we must look at it comprehensively. One is to look, it is likely that the fake honey is layered too neatly; Second, the smell, fake honey does not have the unique smell of honey. If the essence is added, the smell is pungent; The third is tasting. If the sweetness is too weak, caramel or something may be added. If it is crystalline honey, its crystallization should be loose and easy, not as hard as sugar. If it is crystalline honey with alum, the tongue will have astringency after tasting. Real honey has a unique fermented flavor, and the essence should not be able to adjust this flavor; Fourth, we can do some experiments if we have the conditions, but most people don't have time. The simplest test is to see if honey can be drawn, but fake honey with syrup can also be drawn. Secondly, honey can be put on absorbent paper. True honey generally does not penetrate into paper, while fake honey will penetrate into paper when mixed with water. I won't introduce the chemistry method, and many people don't have time to use it. In fact, identifying honey mainly depends on experience. People who often eat honey can basically identify fake honey by tasting it.

Second, the identification of concentrated honey concentrated honey refers to the honey obtained by processing enterprises after heating low-concentration honey at high temperature to evaporate water and increase the concentration of honey. After concentrated honey is heated and concentrated, its crystal nucleus is destroyed, so the concentrated honey does not crystallize and looks like it is for sale. The ultra-high concentration of concentrated honey has also attracted many people to buy it. I thought it was good honey, but I didn't know that the active substance of this honey was destroyed and its efficacy was greatly reduced. Those concentrated honey are all marked to 43 degrees, and Chinese people sometimes prefer to chase indicators, hehe; In addition, concentrated honey does not produce gas and is easy to store. It is normal for consumers to think that the bottle does not swell after buying it. In fact, active honey can produce gas. If the temperature is higher, the bottle will swell, and there will be bubbles in the bottle mouth, which will make consumers suspicious. Fortunately, we are in the plateau here, and the bottle body is compressed by atmospheric pressure after honey is sent to a low altitude place; Finally, concentrated honey contains almost no impurities and sells well, but it is difficult to avoid some wax residues in normal honey. After concentrated honey is concentrated at high temperature, the active substances are destroyed, even the minimum laxative function will become worse, and other health care functions will be greatly reduced, leaving little health care value.

To identify this, first look at the concentration of honey. Be careful if it is marked with Baume degree above 42 degrees. Even if the concentration of naturally mature honey is higher, the honey will droop after being provoked, and the honey under it will not be folded too high; Second, we can see if honey will crystallize. Motherwort honey, loquat honey, peach blossom honey, rhodiola honey, buckwheat honey, seed honey, nectar and earth honey are easy to crystallize at low temperature, but jujube honey is not easy to crystallize. If it is left at a relatively cold air temperature (about 14 degrees) for one month, the honey that is easy to crystallize still looks bright and has no crystallization, which may be concentrated honey. Third, you can taste it. After high temperature treatment, the aroma of concentrated honey is decomposed, so the smell of most concentrated honey is not much different. Among natural active honey, except for Baihua honey and earth honey, the tastes of other honey are obviously different, and even a few honey such as eucalyptus honey and buckwheat honey have a little fishy smell.

Fourthly, there will be tiny white bubbles on the surface of pure natural honey, which is mainly because pure natural honey contains antibacterial hydrogen peroxide, which easily decomposes oxygen at high temperature, making the surface of honey have a layer of white bubbles. Untreated natural honey has strong antibacterial ability. Honey has antibacterial effect because honey is a high concentration solution of sugar, and low ph value can inhibit the growth and development of microorganisms. More importantly, the glucose in honey will produce an antibacterial substance-hydrogen peroxide under the action of glucose oxidase, which can easily decompose oxygen at high temperature! So that there is a layer of white bubbles on the surface of honey.

Finally look at the price. If the price is too low, you should buy it carefully. Due to cost constraints, real honey won't be sold too cheaply.

We are beekeepers. Take my word for it. You can identify good honey by these methods. Of course, the most useful thing is to rely on experience. The taste of real honey can't be faked anyway.

There are a lot of fake honey sold in supermarkets now, besides fake honey, there are also concentrated honey. Cheap is not worth it. Although the price of our honey is high, we must ensure that our honey is not adulterated or concentrated, and it is natural honey.

Anyway, if you want to buy honey, just choose according to my method.
