1, brew before boiling
When cooking Fuding white tea, it is generally not necessary to cook tea with dry tea, but with brewed tea leaves. First put the white tea into the teacup, make the tea with boiling water, and then brew it with boiling water. Brewed tea can also be drunk. After brewing for three or four times, you can make tea with the brewed tea.
Step 2 make tea with boiling water
The correct way to make Fuding white tea is to make tea with boiling water, that is, to boil water first. After pouring cold water into the teapot, start the switch to boil water. Be careful not to drink tea after pouring cold water. When the water boils, you can see bubbles as big as fish's eyes coming out of the water, and then drink tea.
Throw tea
After putting the tea leaves in, cover the teapot and continue to make tea. The time for making tea should not be too long, usually one to two minutes. When the tea in the teapot looks like rouge, you can turn off the fire and pour the tea into the fair cup. Of course, modern electric teapots generally can't see the color of tea soup. Just look at the time and turn off the fire in a minute or two.
4. Pay attention to the temperature of the tea.
The most taboo of cooking Fuding white tea is that it is too late to turn off the fire after the water is boiled, so the water injected at the beginning should not be too full, and the temperature should be adjusted in time. Generally, after the tea leaves are put into use, the temperature of the tea leaves should be slightly lowered, and it is best to cook them with low fire.
The Historical Origin of Fuding White Tea
The Tea Classic written by Lu Yu in the Tang Dynasty quoted the Yongjia Tujing in the Sui Dynasty: "There is a white tea mountain in the east of Yongjia County." According to textual research by tea experts such as Chen Xun and Zhang Tianfu, White Tea Mountain is Taimu Mountain. It shows that white tea appeared as early as the Sui and Tang Dynasties.
In the late Ming and early Qing Dynasties, Zhou Lianggong visited Taimu Mountain and wrote a poem for Fuding Dabai Tea Mother Tea Tree: "Taimu Mountain is full of green snow buds, and the cave is full of sea and sky. Zen people are all equal, and righteous wine also teaches tea. " There are cliff carvings in Hong Xue caves.
In Ming Dynasty, Heng recorded in "Boiling Spring Sketch": "The tea maker takes the fire author as the second time, and the sun is the best, which is also close to nature and breaks the fire ear. If the hand is not clean and the temperature is not appropriate, it will destroy its fragrance and color. When drying tea in the middle of the river, the flag gun is refreshing, green and bright, especially cute. " Heng is talking about the method of making silver needles-drying them in the sun. It is forbidden to touch tea directly without hands, and the lack of production skills will destroy the aroma of tea. Bai Hao silver needles soak in ou, all the silver needles stand upright, and the soup is bright.
