1. Do you want to cook noodles with cold water or hot water?
Many novices will make a mistake when cooking noodles, thinking that there is not much difference between cold water and hot water. In fact, the problem is very big! If the noodles are put in when the water is still cold, then the noodles have formed a ball before the water is boiled, and they are sticky and cannot be dispersed afterwards, not to mention the taste of the noodles.
2. About the cooking time of dried noodles and wet noodles
Now many noodle processing shops outside have dry noodles and wet noodles, so we can choose our favorite noodles according to different tastes. If we have processed wet noodles in our hands, wait until the water in the torch pot boils and rolls violently before putting it in. Stir-fry the noodles in the pot quickly with chopsticks after cooking, and don't turn off the heat halfway. It is suggested that the wet noodles should be cooked with high fire until the water boils and poured with a little cold water. Then, if we have dried noodles in our hands, we don't have to wait until the water is completely boiled, so we can cook them. After cooking, we also stir the noodles with chopsticks. It is not recommended to cook dry noodles with high fire all the time, because there is no water in them. If we keep cooking with high fire, the noodles will not be completely soaked in water. After cooking, we will find that they are hard-hearted and undercooked. I suggest cooking over medium heat. After boiling, pour in some cold water. After boiling again, pour in some cold water. Repeat it twice or so, and the noodles will be basically cooked.
3. Finally, we add seasoning. We usually add some natural seasonings, such as salt, chopped green onion and coriander, to our own cooked noodles. If the taste is heavy, you can add some Chili oil, and finally add a sugar-filled poached egg, not to mention how fragrant it is.
