Pig's trotters were pickled and air-dried by traditional Hubei method. In the process of curing and air-drying, the grease in the trotters will slowly come out, and finally the trotters will dry up, leaving pure skin and meat.
working methods
1, a wax pig's feet, cut into large and small pieces with a machete and carefully washed (because the wax pig's feet are air-dried for a long time and have a lot of dust, they must be carefully washed);
2, ginger slices, pepper washed a little dry for use;
3. Put the washed preserved pig's feet into a purple casserole, add a pot of water, dried peppers and ginger slices and cook for two hours;
4. Wash the lotus root and cut it into pieces with a hob for later use;
5. After two hours, take out the cooked trotters and put them in a bowl for later use;
6. Put the chopped lotus root into the soup for boiling pig's trotters and put it in a purple casserole for 30 minutes;
7. Finally, put the pig's trotters together in the lotus root and simmer for 30 minutes.
