Pleurotus eryngii with red oil

Ingredients: 4 Pleurotus eryngii, red pepper 1 piece, proper amount of auricularia auricula, proper amount of coriander and a little carrot.

Seasoning: soy sauce, aged vinegar, salt, sugar, Zhongjing Chili oil, sesame oil, hot oil, garlic and pepper.

First, we have to cut Pleurotus eryngii in half, then cut it and cook it in a cold water pot. When cooking, we will dice red pepper, chop garlic, cut coriander into inches, soak black fungus in advance, and cut carrots into filaments for later use.

When the Pleurotus eryngii is boiled, we will put in the black fungus and shredded carrot, cover it, continue to cook, and take it out together when it is boiled.

Then put all the food in cold water, tear the Pleurotus eryngii into thin strips by hand and put them in a bowl together. Then add the red pepper, garlic and coriander segments together, and add various seasonings. Finally, heat the oil in the pot, pour the oil on it to stimulate the fragrance, mix well with chopsticks, and let it stand for a while to taste better.
