Practice of Cao Tong ribs soup with lotus root
Ingredients: ribs1000g, lotus root1000g, and medulla tetrapanacis 50g.

Accessories: 3 slices of ham, 2g of salt, ginger 1 slice, 2 slices of star anise, 30ml of yellow wine and 2 shallots.

Step: 1. Wash the ribs and blanch them in cold water to stop bleeding;

2. Take out the cooked ribs and wash the blood foam on the surface with hot water;

3. Put the ribs in a saucepan while they are hot, pour in boiling water, add ginger slices and star anise, cover the pot, and cook over high fire for 20 minutes;

4. Peel the lotus root and cut it into large pieces for later use;

5. When the soup in the pot turns white, add ham slices, yellow wine, shallots, medulla tetrapanacis and lotus root blocks;

6, cover, simmer 1 hour, add salt to taste when out of the pot.
